https://www.schoolofcomposition.com/why-are-there-3-minor-scales/Because we started with one which is just the aolian mode (natural minor), then sharpened the 7th to get more satisfying harmonic progressions, particularly when leading from chords involving the 7th to the tonic (harmonic minor), then sharpened the 6th as well on the way up to make it sound less weird when singing, but reverted to aolian when desending (melodic minor).
Basically, because they sound good in different contexts.
Wish I'd learnt more music theory.
